Paola Calciolari began her career as a pharmacist but her true passion was food. She took a gamble, leaving her secure job in order to produce typical condiments from Mantova, often employing her grandmother’s recipes. And we’re glad she did. She makes her exceptional mostardas by sourcing locally harvested fruit, slicing and candying them in their juices, and then adding drops of a very concentrated, spicy mustard extract; it is a highly labor intensive process.

Within hours of me placing an online order, The Oil Tree called to let me know they hadn’t applied a particular discount that I was owed, and would be refunding me the difference. They also called to verify if it was in-store pick-up or if I needed it shipped, and then shipped the product to me next day at no additional charge as they hadn’t enabled a shipping option on the online shop at the time of my purchase. None of these steps were necessary and I would have been happy to pay full price and pay shipping, but the accountability and speed-to-connect was so impressive to me. I would certainly purchase from The Oil Tree again based simply on their business principles. As a bonus, my husband loved the book when it came in :)
