Meaty and unctuous, this dry-cured sausage with no added nitrates or nitrites is flavored with paprika to give it a bit of a kick. Coarsely chopped Ibérico pork meat is mixed with pork fat to create a sausage superb for tapas or cooking. All Dehesa Cordobesa® products are “de Bellota 100% Ibérico,” meaning they come from 100% purebred, acorn-fed Ibérico pigs. This is the highest possible classification of Ibérico meat, and is quite rare. Much more common are several lower quality categories that are still classified as Ibérico, but are non-free-range (Cebo) or only 50%/75% Ibérico.

Supreme Customer Service
Within hours of me placing an online order, The Oil Tree called to let me know they hadn’t applied a particular discount that I was owed, and would be refunding me the difference. They also called to verify if it was in-store pick-up or if I needed it shipped, and then shipped the product to me next day at no additional charge as they hadn’t enabled a shipping option on the online shop at the time of my purchase. None of these steps were necessary and I would have been happy to pay full price and pay shipping, but the accountability and speed-to-connect was so impressive to me. I would certainly purchase from The Oil Tree again based simply on their business principles. As a bonus, my husband loved the book when it came in :)
