Our partner producer, SAOV, utilizes a high vacuum during the malaxation process to eliminate all oxygen at this critical stage, where the oil is most susceptible to oxidation. This advanced technique not only preserves the phenolic content and overall chemistry but also enhances the flavor profile while minimizing oxidation markers.
