Chicken kabobs are always a festive way to bake or grill. I love seeing my family eating a healthy meal and enjoying it! Chicken kabobs are easy and versatile. Have fun with different marinades, add pineapple, mix and match your favorite vegetables. The sky is the limit!
*Recommended: Marinade the chicken in the Garlic Infused Olive Oil, Jalapeño Aged White Balsamic Vinegar, Maple Pepper, and Cilantro for one to two hours before building the kabobs.
Ingredients
- Garlic Infused Olive Oil
- Jalapeño Aged White Balsamic Vinegar
- Maple Pepper, Original
- Chicken breasts, cut into large cubes
- Onion, cut into 4 sections
- Red and Yellow Peppers, seeded and cut into 1 inch squares
- Zucchini, cut into ½ inch discs or halved
- Cilantro, roughly chopped

Pre-heat oven to 400 degrees.
Use a small bowl to create the marinade. Pour equal parts Garlic Oil and Jalapeño White Balsamic into bowl (about ¼ cup each). Add 1 teaspoon of Maple Pepper and a few sprinkles of cilantro. Whisk together with a fork until combined. **

Cut Chicken breasts into large cubes - cut onion into 4 sections - red and yellow peppers need to be seeded and cut into 1 inch squares - cut zucchini into ½ inch discs or one inch discs halved.
*** I like to place bell peppers on the top and bottom to secure the ingredients on the skewer. Your choice - have fun with it!
Place the skewers on a baking sheet. Drizzle lightly with Garlic Oil and sprinkle with Maple Pepper.

**Recommended: Pour marinade into ziplock bag. Once the chicken is cubed - add chicken into ziplock bag - Place the ziplock bag in refrigerator for one to two hours before preparing the skewers.
***If using wooden skewers please soak in water for 15 minutes before building the skewers.
