Lapsang Souchong is a black tea from the Wuyi Mountains of Fujian Province, China. The leaves are placed in bamboo baskets and dried over pine fires, which imparts a rich smoky flavor, sometimes compared to fine whiskey. We use our mild High Plains Clover Honey as the base, gently heating it with the tea to let the herbal nuances permeate. The result is a smoky, floral honey, perfect in tea, on toast, or over hard cheeses.
